Inside Komal, the South LA Restaurant Turning Heirloom Corn Into a Destination Dinner

Featured Business of the Week | By: Maiyah Jimenez

A tortilla can give you a reason to cross town. At Komal, inside Historic South Central's Mercado La Paloma, it can also introduce you to the farmers, seeds, and traditions behind your dinner.

Founded by Fátima Juárez and Conrado Rivera, Komal combines a working corn mill with a kitchen serving masa-based Mexican dishes. Its menu includes tlacoyos, quesadillas, and the Taco Sonia, a tribute to Juárez’s upbringing in Mexico City. The restaurant’s foundation is heirloom corn—and the care required to turn it into fresh masa.

Now, there’s another reason to put this neighborhood business on your dining calendar.

A Small Dining Room With a Big Story to Tell

According to Eater Los Angeles, Juárez will introduce an eight-course tasting menu on Monday, October 19, 2026, featuring 22 heirloom corn varieties. The new service gives diners a closer look at the ingredient that shapes Komal’s cooking.

With just 12 guests per seating, the format promises an intimate introduction to the chef’s work. It’s an appealing reservation for anyone who likes a meal to come with a sense of discovery.

The Craft Starts Before the Tortilla Hits the Comal

Komal’s daily work begins with native Mexican corn, nixtamalized on-site and milled into fresh masa. Nixtamalization involves treating corn with an alkaline solution before grinding—a traditional process central to the restaurant’s approach.

The business describes its sourcing as a commitment to traceability, fair compensation, and preserving native corn varieties. Its partners include Tamoa and Somos Maíz, which connect that work to farming communities in Mexico.

Juárez’s inspiration also comes from personal memory: the markets and street vendors of Oaxaca and Mexico City, and the food she shared with her mother and grandmother. That connection gives visitors something to consider with each order: where an ingredient begins, and how family traditions carry it forward.

What’s on the New Tasting Menu?

The announced autumn menu includes a dry-aged kanpachi tostada with aguachile negro, slow-roasted lamb with black mole, and a cochinita pibil tamal with fermented habanero and charred plantain salsa.

Nonalcoholic beverages accompany each course, with ingredients including corn silk and hoja santa. Dessert includes a concha finished with toasted corn streusel. Together, the dishes offer a glimpse of how much range Juárez finds in corn.

You Can Start With Lunch, Too

A tasting-menu reservation is one way to explore Komal. A visit during regular service offers another.

The Mercado La Paloma listing highlights masa-based antojitos alongside fresh tortillas, tostadas, and masa sold by the pound. For a first visit, ask the team what’s available and which corn varieties they’re working with that day. For home cooks, taking fresh masa or tortillas home can extend the experience beyond lunch.

That flexibility makes Komal a compelling local-business feature: you can plan a special dinner, stop in for a meal, or discover an ingredient for your own kitchen.
